Easy banana, blueberry, coconut muffins

I try to cut down on numbers in my boy’s lunch box. Those sneaky little numbers come in so many packaged foods – you know the easy things you pick up in the supermarket – muesli bars, pikelets, rice crackers.

I like to limit, as much as possible, the amount of sugar my boy eats, without being over the top and cutting out all of the fun stuff. Life is about a balance, after all.

So these muffins are great. I make them up every three or so weeks and freeze them so I can pop one in the lunch box each day. I often bring one to work myself to have after I’ve run into work as a pick-me-up, too.

Easy banana, blueberry, coconut muffins

Makes: 15

Prep: 10 minutes

Cooking: 20 minutes

3 cups self-raising flour

¼ cup dessicated coconut

½ cup brown sugar

1 tsp cinnamon

2 small bananas, mashed

¾ packet of blueberries

1 egg, beaten

90ml coconut oil

1 ¼ cups milk

Squeeze of honey

  1. Preheat oven to 180 degrees. Combine the flour, coconut, sugar and cinnamon in a large bowl. Make a well in the centre. Add in mashed banana, blueberries, egg, oil and milk. Squeeze in some honey (I usually add about 1 tsp).
  2. Stir to combine. Once all the ingredients are mixed, stop stirring as over-stirring muffins makes them tough instead of fluffy.
  3. Lightly grease two muffin trays. Add spoonfuls of the mixture into the muffin holes. I tend to fill mine to just below the brim so they are not too big at the end. You should get about 15 muffins this way (and when smaller it won’t fill up my boy too much and he’ll eat the rest of his lunch!).
  4. Place in oven and bake for 20 minutes or until golden. Remove and set aside to cool in the tray for 10 minutes or so. Then transfer to a wire rack to cool completely. Though, you probably won’t – you’ll probably eat one while it’s hot and steaming like I do.

    1. Oh, that’s a tricky one, Alexcellent. My boy eats soooo much so I don’t usually have to worry about the lunch box. What about if you added a few bits of white chocolate? It’s all about the bribery… 😉
